the reason why nick describe gatsby as having an extraordinary gift for hope is: because Gatsby believes he can still relive the love he and Daisy shared. He still has hope that Daisy never loved her husband, but is still in love with Gatsby.

Aiming for a married woman is really a long stretch in any men's mind, but Gatsby still hoping that his true loved will stump all the odds.
